Procuramos que nuestros vinos sean lo más naturales posible, por lo que intervenimos lo imprescindible en su elaboración y terminación. Por ello evitamos, si es posible, las clarificaciones y filtrados, pues obtenemos la clarificación de forma natural con el frío propio de la zona. Puede ello dar lugar a alguna ocasional precipitación tartárica en botella. Aconsejamos por lo tanto decantar el vino antes de servirlo.
Una pequeña cantidad envejecemos en barricas de roble francés y americano, obteniendo vinos de una crianza de unos 12 meses.

Winemaking is a great responsibility, taking all the hard work of the farming year and preserving, protecting it, and transforming it into wine.
Our vineyards are free from herbicides and chemical treatments. We respect the natural process of winemaking and the importance of good grapes. Only organic techniques are used in farming and we select our grapes in the most adequate moment. The grapes are picked when they have intense and complex flavour, moderate potential alcohol and while they still retain the crisp acidity that keeps the wines fresh and lively.They are picked by hand in boxes of 18 kilograms and only the selected grapes get to the cellars.
Our wines are unique and special because of their reflection of where and how they are grown.
